Hoppin' John Soup
So good for this colder weather!!
  • 1 tablespoons olive oil
  • 1 onion, chopped
  • 1/2 pound turkey kielbasa, chopped (I usually just add a whole package)
  • 2 cans black-eyed peas, drained and rinsed
  • 1 can navy beans, drained and rinsed
  • 2 C. brown rice, cooked (yellow or white rice will do)
  • 2 cans low-sodium chicken broth
  • 1 teaspoon garlic powder
  • 1/2 teaspoon cayenne pepper, optional
  • 1/4 teaspoon thyme
  • Salt/pepper to taste

In soup pot, heat oil over med-high heat. Add onion and cook till translucent. Add kielbasa, peas, beans, rice, broth and seasoning. Stir well to blend and heat. Mash beans slightly to help thicken soup (back of spoon or potato masher). Serve when hot.

My mom makes this New Years Eve for good luck.....not many in our family like the peas alone but this is great stuff!  I've been searching all day today for a good and hearty beef stew recipe....anyone?

I just joined Ultimate Staff.net today and have any easy beef stew recipe that I have used for years.  It is just basic so you can add or doctor it up any way you care to.

CLASSIC BEEF STEW

1-2 Pounds of stew meat preferably tenderized (if not,  add meat tenderizer to meat first)

1 large onion - chopped

1 large green bell pepper chopped

1 large can chopped tomatoes and 1 (8 0z) can tomatoe sauce  (you can use rotel tomatoes if you want it really spicey)

2 cups (more or less) of beef broth (use canned or boullion cube in water)

3-4 potatoes peeled and cubed

1/2 package peeled carrots, chopped into thirds

2-3 tablespoons chilli powder; salt & black pepper to taste

Brown stew meat in hot dutch oven adding a little vegetable oil if it it sticks.  When meat begins to brown well, add  chopped onion and bell pepper.  Let mixture cook until vegetables have softened then add tomatoes and sauce and beef broth to pot.  Let simmer over meadium heat for at least 30 minutes.  Then add potatoes, carrots, chili powder & salt and pepper.

Let simmer at least another 30 minutes (preferably another hour) on low heat until potatoes and carrots are soft and other ingredients are done.  The longer you can let it simmer, the better and if it gets too thick, add more beef broth.

Our family always eats this with cornbread but crackers are good too.  It is really a fool proof recipe.  You can leave out bell pepper if you don't like it but I think it makes the stew!  Enjioy

Fat Burning Soup

6 large Green Onions

2 green peppers

2 LARGE cans diced tomatoes

1 bunch of celery

1 pkg vegetable lipton soup mix

2 cubes of beef or ham boullion

1 large head of cabbage

Put all ingredients into a rather large pot along with 4 LARGE cans of water and any spices you want to add (salt, pepper, oragano, all spice, et.).  Use the diced tomatoe cans for the water for added flavor. 

This is a rather large portion of soup.  It is to be eaten as part of a 7 day diet plan, but the soup is very good!  ENJOY!  you will find the 7 day diet plan in the Forum under Living Well, then diet - posted by me trsyzdek.
