Broccoli Salad



 

3 bunch broccoli (raw)
1/2 c. red onion, chopped
1/2 c. raisins
1/2 c. Cashews
1/2 c. sunflower seeds
half bag of real bacon bits

Mix together, breaking up broccoli into bite-size pieces. Dressing to follow.

BROCCOLI SALAD DRESSING:

1.5 c. mayonnaise
1/2 c. sugar
2 tsp. vinegar

mix all together well until smooth - poor onto broccoli mixture and toss well.

Chicken Salad

1 whole chicken

1/2 red onion

4-6 stems of celery

1 red apple

small can crushed pineapple

1/4 cup sliced or chopped almonds

1.5 cup mayo (more if you like it like that)

pepper to taste

boil the chicken until begins to come off of the bone.  Take chicken out of the water and set aside to cool.  while it is cooling prep the other ingredients - chop the onion and celery and cut the apple into small pieces.  put all ingredients in a large bowl.  de-bone the chicken and add to the other ingredients.  add the mayo and pepper.  Mix all together really good using a large spoon or your hands.  Let fridgerate for atleast 3-4 hours and then servce on bread of your choice.
