Greek Islands Pastry
Crust
1 package (15 ounces) Refrigerated pie crusts (2 crusts)
1 ounce fresh Parmesan Cheese, grated, divided (1/4 cup)
Filling
1 package (8 ounces) Cream cheese, softened
1 package (4 ounces) crumbled feta cheese
1 package (10 ounces) frozen chopped spinach, thawed and well drained
1 garlic clove, pressed
Toppings
1 can (8.5 ounces) artichoke hearts, drained, chopped
1 can (3.5 ounces) pitted ripe olives, sliced
1 lemon
1 1/2 teaspoon Italian seasoning
3 plum tomatoes, sliced
Preheat oven to 375 F. Let pie crust stand at room temperature. 15 minutes.
Lightly dust a large round stone with flour. Unfold one pie crust and place in center of baking stone. Lightly brush with water. Grate half of the Parmesan cheese over crust. Unfold second crust and place over first crust on baking stone, matching edges and pressing down to seal. Roll both crusts out together to edge of baking stone. Fold 1/2 inch of edge of crust in toward center, forming an even border: press to seal seam.
Form a decorative fluted edge: prick center of crust. Bake 20-25 minutes or until golden brown. Remove to cooling rack. Cool 10 minutes.
For filling, combine cream cheese, feta cheese, spinach and garlic; mix well.
For toppings, chop artichokes. Slice olives. Zest Lemon. In a small bowl, combine artichokes, olives, lemon zest, and Seasoning mix.
Spread spinach mixture evenly over crust. Spread artichoke topping evenly over filling. Slice tomatoes; arrange in an overlapping circular pattern over topping. Grate remaining Parmesan cheese over tomatoes. Cut into wedges.

White Chocolate mix
this is good to set out all over the house and let everyone enjoy or something very simple to take to a party and is always a hit!
3 c. rice chex
3 c. corn chex
3 c. cheerios
3 c. thin pretzel sticks broken into thirds
12-16 oz peanuts (lightly salted)
large bag of M&M's - i use the red and green for christmas time
32 oz white chocolate wafers
Mix all ingredients except chocolate in a large bowl. Melt white chocolate and pour over mixture and mix to coat well. Lightly spray 3-4 cookie sheets with Pam and spread on each cookie sheet. Put in freezer long enough to harden the chocolate and break into pieces. Put in candy dishes, tins to take to work, or leave in ziplock bags to keep fresh!
ENJOY!!!

Anytime Crackers:
1 box of saltine crackers
1 1/2 cups canola oil
1 pkg ranch dressing mix
2-3 tbsp crushed red pepper (you can add more if you want spicier)
Mix ranch seasoning w/canola oil and crushed red pepper. Mix it up really good.Put your crackers in a container and pour mix over it.(you can use long rubbermaid or I sometimes use a large pickle jar that has been THOROUGHLY cleaned). You have to turn the container upside down and leave for 15 min. After 15 min. turn it over again. You have to turn it every 15 minutes for 2 hrs.
I think it's pretty low in calories...even better LOL
I bring to work all the time or I take to parties...such a hit and can easily be put in baggies too for the movies, football games, etc!
ENJOY!!!

4-6 of the larger size cans of canned chicken breast, drained
1 cup of ranch
1 block of cream cheese (softened)
1 cup of shredded Cheddar cheese
3/4 to 1 cup of Frank's Original Hot Sauce (you can use what ever brand you would like but I like Frank's the best)
Empty the cans of chicken into the crock pot (use a fork to break up the chunks for more shredded chicken)
In a separate bowl, mix the cream cheese, ranch, hot sauce & cheddar cheese and heat it in the microwave until the cream cheese is mixed. Pour mixture over the shredded chicken in the crock pot. Mix everything together. Set on medium heat to finish heating. Once warm, set to warm setting and enjoy.
